En pâtisserie, il existe un gâteau qui sert de composition à plusieurs desserts. Il s’agit de la génoise. Pour les apprentis pâtissiers, la préparation de la génoise est l’une des meilleures manières pour améliorer ses aptitudes de chef pâtissier. Les ingrédients pour la génoise

Pour une génoise de 6 personnes, il faudra les ingrédients suivants :

  • 125 grammes de farine de blé : la farine de blé est la farine la plus communément employée pour une génoise. Son apport en protéines est faible. Vous pouvez tout de même la remplacer à hauteur de 50 % de son poids par de la fécule de pomme de terre. Celle-ci donnera à votre génoise de la finesse après cuisson ;
  • 125 grammes de sucre : vous avez le choix entre le sucre semoule ou le sucre cristallisé. Si vous optez pour le sucre inverti, celui-ci retiendra l’eau et facilitera la conservation de la génoise. En revanche, ce sucre a une forte teneur en glucides ;
  • 4 œufs : les œufs sont riches en protéines. Leur teneur en eau permettra de vite dissoudre le sucre ;
  • Un demi-sachet de levure chimique : la levure chimique est nécessaire pour faire gonfler votre pâtisserie.

Une fois les ingrédients connus pour cette génoise, on peut à présent s’attaquer à la préparation du gâteau.

La préparation de la génoise au robot

Pour préparer la pâte, il faut au préalable choisir le moule idéal. Le choix du moule est fonction de l’utilisation réservée à la génoise. En général, les moules employés sont les moules ronds à génoise ou encore les moules ronds à savarin. Lorsque le choix définitif du moule est arrêté, pensez à le beurrer et à le réserver au froid. Préchauffez ensuite le four au thermostat 6 (180 °C).

Pour faire la pâte, il faudra un robot. Il sera utile pour y verser progressivement les ingrédients. L’appareil fera tourner la préparation sans s’arrêter, et vous obtiendrez une belle pâte. En réalité, le secret d’une génoise réussie est la rapidité d’exécution. Puis, vous devrez mélanger la levure chimique à la farine. Il faudra séparer les blancs des jaunes d’œufs, et monter les blancs en neige ajoutés d’une pincée de sel. Lorsqu’ils sont fermes, ajoutez-y le sucre et battez encore. Baissez ensuite la vitesse du robot et versez en une fois les 4 jaunes d’œufs. Juste après, ajoutez la farine et la levure en pluie.
Éteignez rapidement votre le robot pour que la préparation n’ait pas le temps de retomber ; versez-la dans le moule et lissez la surface de la pâte avec soin.

Enfin, enfournez immédiatement votre préparation pour 20 minutes. Une génoise est prête quand au doigt ou au couteau, on constate que la pâte est souple. Sortez votre moule du four. Attendez qu’elle refroidisse et démoulez votre génoise.

La préparation de la génoise à la main

Préchauffez votre four à 180 °C. Si vous ne possédez pas un robot, vous devrez alors faire usage de toute votre force physique. Pour cela, il vous faudra un cul de poule. Celui-ci devra être posé dans une casserole selon la technique du bain-marie.

Dans ce cul de poule, versez-y les œufs cassés auparavant puis fouettez-les vigoureusement. Ajoutez-y du sucre en vue d’obtenir une préparation lisse, qui prend du volume.

Retirez par la suite le cul de poule du bain-marie et maintenez le fouettement de la pâte jusqu’à ce que la préparation refroidisse. Mélangez farine et levure chimique et réservez. Prenez à nouveau votre cul de poule et incorporez avec délicatesse, à l’aide d’une spatule, la levure-farine pour l’obtention d’une pâte homogène. Là encore, remplissez votre moule déjà beurrée de la pâte et enfournez pour 30 minutes.

Au final, quelle que soit la méthode de préparation utilisée, versez toujours au deux tiers votre pâte dans le moule. Votre génoise est donc prête à être garnie.
